I got some flounder and mahi mahi fillets. Anybody got any good recipes/ideas what to do with 'em? I was going to broil them with a little Tony Chachere's seasoning now seems a little boring.

I don't know about the flounder, but some good seasoning salt on a good grill will do a world of wonders on the mahi-mahi.


5/4 of people have trouble with fractions.

I have grilled my fair share of Mahi Mahi and it usually works out very well. Start with a nice fillet, preferably with the skin still on one side. Bring the grill up to heat and place the fish on skin side down. Add just a couple pats of butter to add a litle moisture. About half to two thirds of the way through cooking the rub some olive oil on the fillet, again still skin side down, and sprinkle on some lemon pepper seasoning. Season to taste here but usually a generous amount is desired due to some falling off during the flip. The olive oil will help to hold the seasoning. Some even rub the seasoning in but thats optional. Flip over the fillet so the skin is now up and continue cooking. Once the skin can be easily pulled off your almost finished. Another sprinkling of oil and a light coat of seasoning again for the second side should do the trick. Once your fillet is nice and flaky your done. Check a couple spots to make sure it's done in the thicker spots and your ready for a nice meal.

Try this recipe and let me know how it tastes. I have been wanting to try it but don't have the time this week. The recipe calls for Sea Bass but you could substitute flounder or mahi mahi.
