The kids have been pestering me, so I finally bought an ice cream freezer. It says it makes six quarts. I wondered if some of you might give me your favorite recipes, especially vanilla. I know there's a recipe on the box but I also know people have their own favorites, with differing ratios of eggs, milk, cream, half and half, sugar, vanilla, etc. I've also heard some people used condensed milk.
Thanks!

If you like chocolate, this one is great!

1 (14 ounce) can sweetened condensed milk
1/2 cup unsweetened cocoa powder
2 cups heavy cream
1 cup light cream
1 tablespoon vanilla extract
1/2 cup chopped pecans
1 cup miniature marshmallows

DIRECTIONS

1. In a medium saucepan over low heat, cook and stir condensed milk and cocoa until smooth and slightly thickened, 5 minutes. Remove from heat , and allow to cool slightly. Stir in heavy cream, light cream, and vanilla. Refrigerate until cold.
2. Pour mixture into the canister of an ice cream maker, and freeze according to manufacturer's directions. Stir in nuts and marshmallows halfway through the freezing process.

Vanilla Ice Cream

1 cup Sweetened condensed milk
2 cups Sugar
3 to 4 Tablespoons vanilla extract
4 cups Whipping cream

Finish topping off the freezer can with regular milk. This one is easy to make.

I sometimes substitute 2 can of evaporated milk for 2 of the whipping creams because my wife's mother uses evaporated milk in her ice cream and my wife likes it. I have also substituted 1 half-and-half for 1 of the whipping creams. Either way its good!

1 - 13 oz. can Pet milk (evaporated)
1 - 3 3/4 oz pkg instant pudding mix (I use cheesecake)
1 cup sugar or 3/4 cup Splenda
2 cups milk
1 cup whipping cream
Mix all and put into ice cream maker.
I like this recipe because it can be made immediately....no cooking and waiting to cool, and doesn't have raw eggs that aren't good for anyone with lowered resistance. Also, I convince myself that it's healthier if I use Splenda, which doesn't affect the sweet taste.

Having read the other posts, I'm going to try it with choc. milk and choc. pudding mix and throw in some mini choc chips and pecans. The variations are endless.

Milky Way Ice Cream

1 lb. milky ways or 6 bars or 2 10-oz bars

2 cans Eagle Brand Milk

1 pint whipping cream

Add enough milk to fill the freezer almost full about a 1/2 gallon. (I use chocolate milk.)

Slice up milky ways and add Eagle Brand milk. Melt in microwave or double boiler. Stir in whipping cream and add milk.

Pour into ice cream freezer and freeze.

Cheesecake Ice Cream

5 cups half and half or light cream

2 1/2 cups sugar

4 beaten eggs

3 8 oz. packages cream cheese or Neufchatel cheese, softened

1 teaspoon finely shredded lemon peel

2 tablespoons lemon juice

2 teaspoons vanilla

fresh fruit for topping (Optional)

In a large saucepan, combine 3 cups of the half and half or light cream, the sugar, and eggs. Cook and stir over medium heat just until boiling.

In a large mixing bowl beat cream cheese with an electric mixer until smooth; gradually beat in hot mixture. Cover and chill completely.

Stir in remaining half and half or light cream, lemon peel, lemon juice, and vanilla. Freeze in a 4 or 5 quart ice cream freezer according to the directions. Ripen 4 hours.

Garnish each serving with choice of fruit, if desired. (Most of the time, we eat it plain, but I have tried it with cherries or pineapple before, and it was pretty good.)

Makes about 3 quarts (24 servings)

What kind of ice cream maker did you get, SaltieDog? We have been looking for one and it seems every one that we look at has lots of pros and lots of cons! Give us a review of yours when you get a chance! Smiler

TSC, I bought a Rival 'At Home Entertaining' model 6 quart electric freezer on sale for $24.00 at Walmart on Friday. It's just a cheapo with a plastic bucket, plastic dasher, a decent motor, and lightweight metal canister, but I did make some awesome vanilla ice cream with it yesterday and couldn't tell any difference between mine and the expensive electric wooden bucket type that my parents used to have. It took about 40 minutes to make a canister full.

6 quart capacity for less than $25? That sounds like my kind of machine!!!! Thanks for the review, I may have to see if I can find one at Target or on Amazon.com (I have an anti-WalMart thing going on)!

LOL, Crusty! Your way is easier and cheaper, that's for sure. The freezer was cheap but I spent nearly fifteen bucks on the ingredients to make the stuff!
