My kids actually like most veggies but aren't too thrilled about zucchini. Anyone have a good recipe that is kid tested? I was thinking along the lines of something with pasta sauce and/or cheese to add a little more flavor. Thx for responding!

If you have to pay for the zucchini and the kids do not like it, just serve something else! Zucchini is not an essential food! You might also try the "usually only grown-ups like this" approach! LOL! Chopping it small and overcooking it in a meat spaghetti sauce, as you mentioned, is a good idea!

Try dicing it into cubes, stir frying in EVOO and a dash of soy sauce (served over rice. I prefer wild rice or brown rice).

4 Potatoes, cut in wedges
2 new mexico green chiles, or the peppers of your choice, just cut into chunks
1 sweet onion, cut into chunks
yellow squash & zucchni sliced into 2" chunks or rounds
1/4 cup olive oil
1 Tbs cracked rosemary
1-2 tsp sea salt
1/2 - 1 tsp thyme
1-2 large garden tomatoes, cored and diced - optional add for final 5 or 10 minutes cooking time ( I have used green tomatoes too)

Combine all of the veggie chunks in a large bowl. Add the olive oil, rosemary, salt, thyme. You can grill in wire basket on grill or just fix in the oven, preheat @ 350, sear the potatoes and veggies on top to stove approx 3 minutes per side. Put in 9 x 13" pan cover with foil and cook for approx 30 minutes, once done turn the oven to low and veggies with stay nicely for a few hours.

Oh yum PEJ that sounds good!

My aunt used to roll it in corn meal and fry it like okra, seasoned with salt & pepper. It was always good.

All those recipes sound good! My aunt used to make zuchinni bread, sort of like banana bread.
