Because your tongue will beat your brains out trying to get to it! I love this recipe. A friend's mom made it once and it was an instant favorite for me. I hope you like it, too. It has bacon in it! What's not to love?

Broccoli Salad with Bacon

Ingredients
1 c Mayonnaise
2 1/2 lb Broccoli (or 2 big bunches)
1/2 c Sugar
1 c Shredded sharp cheddar
1/4 c Vinegar
1/2 lb Bacon, crisp fried and crumbled. Don't cheat and use Bacon Bits. You can cheat and use real bacon pieces though.

Directions
Whisk together mayonnaise, sugar and vinegar and set aside. Cut broccoli into florets and throw away the stems. Combine broccoli florets in a large bowl with cheese and bacon. Toss with mayonnaise dressing. Cover and chill overnight before serving.

If you don't allow it to sit overnight, it will taste funny. This stuff has to set up and marinate for at least 8 hours. Be patient, it is well worth it!

Can I add something to your recipe, TSC? I love this salad but I add golden raisins and toasted sunflower seeds to it. I am not a fan of raisins, but they are great in this recipe!

Raisins and sunflower seed? Sweet and salty! I think they'd make a fine addition!

And if anyone is watching their weight, sugar, fat, or being a vegetarian:
you can sub out the fake mayo (recipe below), and BACO's. Ya'll know that BACO's are TSP, right? Yeah, meat eaters! Bacon Bits are really SOY!!! Big Grin

Mock-Mayo:
3/4 cup of soy milk
1/3 teaspoon mustard
3 teaspoons of lemon juice
Dash of salt
1/3 teaspoon of paprika
10 teaspoons of vegetable oil

1. Combine the soy milk, mustard, lemon juice, salt, and paprika in a blender. Use a low setting and do not over mix. Slowly add the oil, one drop at a time. This will cause the mixture to thicken. Once all the ingredients have been added, mix until a smooth texture is achieved. As with regular mayonnaise, keep it refrigerated.

Makes about 1 cup.

I recently purchased the Salad Makes the Meal cookbook that was profiled in the Times Daily and written by a former Tuscumbia resident. Anyone who eats a lot of salads should definitely check into it. Very good stuff.

And for the record, TSC, you signature is incorrect. It's been proven to be a false statement by Snopes.com. Snopes.com

I make this, but since I'm not a raisin fan I substitute dried cranberries. I also use cranberry vinegar.

I also cut up a little bit of red onion and put in it. I'm not much of an onion person, but it just adds a little more flavor.

It is good anyway you fix it!
